Our grand father, Christos Theodoro Katopodis,
was an owner of a Hotel in the Island of Lefkas. He was
also owner of a fish farm at the Island. It was at that
place that our father, Constantin Christos Katopodis, very
early learned to take care of the process and elaboration
of the fish roe sac in the fish farm of the family. A tradition
passed from father to son, from generation to generation.
When our father immigrated to Brazil, he brought in his
soul the recipe of the process of spawn of Lefkas. Since
1955 the fish roe sac of mullet (Tainha in Portuguese) are
elaborated with the same dedication, love and pleasure that
animated the Greek ancestors, by the hands of our father.
From the initial
stage, selection and washout, passing to the salting and drying
in special stoves (incubators) designed so as to pass up the
solar rays that eliminate bacteria and fungus, until they
reach the final stage when the fish roe sac are dipped in
a pure semi solid wax of bee, the fish roe sacs of the Lefkas
Mullet Bottarga are only touched by the dedicated hands of
our father in a real crafty process of the family tradition.
