Our Process

 

Lefkas Mullet's roe manufacture needs a lot of care and precision and goes thru different steps:
* Roe is cleaned and freed of possible impurities.
* It is being accurately salted and let at rest so that all the salt can be absorbed.
* Then it is being rinsed, put on tables and pressed.
* Finally it is being modeled and dried on the sun
* Lefkas Mullet Bottarga is covered with Bee Wax to preserve the roe from the elements.

At the end of all these processes the Bottarga is:
* Packed
* Weighted, selected and labeled
* At last, put in the storehouse, ready for selling
