Lefkas
Mullet Bottarga is originated from LEFKAS, a Greek island
among the 7 Ionian Islands in Occidental Greece, and the processing
of dried fish roe was an inheritance of the first Greeks living
at that region.
Lefkas had been conquered by the Venetians during the 18th
century. It was at that occasion that they were infatuated
by that delicacy of yellowish color (amber) and special
taste; so exquisite as accentuated. Illustrious families
of Venice were receiving annual shipments and at the same
